Before you begin, you'll want to calculate the number of gallons of your wine that's whole cluster. For example, if you have 1000 gallons of wine and 30% of it is whole cluster, then you'll have 300 gallons of whole cluster.
To specify the percentage of a wine that's whole cluster during fermentation:
- From the Operations menu, or work order, click Press Cycle.
- In the Press Cycle section, set the Out to the number of gallons currently in the tank so that the tank is empty at the end of the operation. In the example below, the tank has 1000 gallons so our Out is set 1000.
- In the Destination Vessels section, select the tank that you’re moving the wine to.
- Select the first fraction types for the wine.
- In the Post field, enter the number of gallons that are made up of that fraction type. In our example, 70% of our 1000 gallons is combined; the Post for our combined fraction is 700.
- Click Add Line to specify the amount of wine that's whole cluster.
- To specify the percentage of whole cluster, select the same tank that you selected for the first fraction type.
- In the Post field, enter the number of gallons that are made of whole cluster. In our example, 30% of our 1000 gallons is whole cluster; the Post for our whole cluster fraction is 300.
- Click the
Calculator to recalculate the total volume.
- Save the operation.
After completing the Press Cycle operation, the wine’s product page reflects its fraction type.
