To report non-grape wines and juices in the TTB Report, you’ll need to:
Once you’ve set these up, fruit intakes, extractions, and bulk intakes that you perform on non-grape materials will be included in the TTB Report.
Setting Up a Beverage Type
To report on non-grape wines in the TTB Report, you’ll need to set up a new beverage type. When setting up the beverage type, be sure to select the correct base material and a color that will allow you to easily identify the beverage on the Vessels page.
Setting Up a Variety
You’ll also need to set up a variety for the non-grape wine. When setting up the variety, be sure to set the Type to the beverage type that you created.
Fruit Intake and Extraction of Non-Grape Fruit
When you do a fruit intake, be sure to select the variety that you created.
The fruit will be reported in Part IV (Summary of Materials Received and Used) section, under the Kinds of Materials Other Than Grapes in a new column that’s based on the base material.
Extraction of the fruit will be reported in Part VII (In Fermenters End of Period).
Bulk Intakes of Non-Grape Wine or Juice (Non-Declared)
When you perform a bulk intake of non-declared, non-grape wine or juice, be sure to select the correct beverage type in the General tab's Wine Details sub-tab.
Bulk intakes of non-grape wines and juices are reported in the Part IV (Summary of Materials Received and Used) section, under the Kinds of Materials Other Than Grapes in a new column that’s based on the base material.
Bulk intakes of non-grape wines are also reported in Part VII (In Fermenters End of Period).
Bulk Intakes of Non-Grape Wine, Juice, Concentrate or Flavors (Bonded as Juice)
When you perform a bulk intake of non-grape wine, juice, concentrate, or flavors that are as bonded as juice, be sure to specify the following in the General tab's Costing & Labs sub-tab.
- Set the Tax State to Bonded
- Set the Tax Class to Juice
Multiple Non-Grape Materials in the TTB Report
When you have multiple non-grape wines and juices, they’ll be in Part IV under the Kinds of Materials Other than Grape column. The material with the highest value displays in its own column while all others are grouped into the Others column.
